OUR FREEZE-DRYING PROCESS

STEP 1 - OUR SUPPLIERS

Since our inception, we have been working diligently to build a network of trusted local and international suppliers who share our values and commitment to quality.

STEP 2 - FREEZING

We freeze the product under atmospheric pressure, which helps to preserve the shape during sublimation.

STEP 3 - PRIMARY DRYING

Primary drying is the process of removing water through sublimation (meaning it goes directly from ice to water vapor without going through a liquid phase), leaving behind a dry and stable product. This phase is a slow process and removes around 95% of the water content, ensuring the product remains shelf-stable for an extended period.

STEP 4 - SECONDARY DRYING

The secondary drying phase removes unfrozen water molecules in the product using a higher temperature than the primary drying phase, allowing for the efficient and thorough removal of any remaining water. Once complete, the residual water content in the product ranges from just 1% to 4%.
